Planting
We begin by planting the agave, which takes anywhere from 7 to 20 years to reach maturity for harvest, and then we select the best ones.
Harvesting
Next comes the cutting, or jima. "Jima" refers to the harvesting of agave plants, specifically the process of cutting the leaves to obtain the "piña" (the heart of the agave).
Roasting
Next, we cook the 'piñas' in a stone oven filled with oak wood embers, which gives our Mezcal its unique smoky notes.
Milling
Next, we crush the agave with a traditional stone wheel called a “tahona.” Mague milling is the process of squeezing the agave to extract its juice. This process can vary depending on the technique used.
Fermentation
We ferment in pine wood vats, where we formulate unique qualities for our Mezcals, made from 100% natural ingredients. Mezcal fermentation is a process that transforms the sugars in the mague into alcohol and other organoleptic components.
Distillation
During the distillation, our Master Mezcaliers infuse their subtlety, tenacity, and patience to give our mezcals their exceptional notes. The goal of distillation is to obtain more volatile ingredients in pure form and ensure that the mezcal has the desired alcohol content.
